Cauliflower Un-Mac Mac and Cheese

healthy_cauliflower_cheeseWe were a bit skeptical about this recipe but when the students at Live.Life.Healthy recommended it, we knew it was a winner!

Ingredients for Cauliflower Cheese

  • 1 cauliflower, chopped up
  • 3 or 4 large carrots, peel and chopped
  • 1 cup pasta
  • 2 cloves of garlic, crushed
  • 250g grated cheddar
  • 1/2 cup  full fat yogurt
  • 1 cup cream

 

 

Bread crumb topping

  • 1 cup bread crumbs
  • olive oil
  • rosemary
  • A small amount (30 g) cooking bacon (optional)

Oven at 360°F

How to Make Cauliflower Cheese

  1. Put the carrots and cauliflower in a large pan of boiling water.
  2. Boil for a couple of minutes (you don’t want to over do them).
  3. Cook the pasta according to the packet.
  4. Drain and mix together if you’ve done them in separate pots.
  5. Add the garlic, grated cheese, cream and yogurt.
  6. Mix thoroughly.
  7. Place in a large oven proof dish.
  8. Make your bread crumbs by adding all the ingredients to a food processor
  9. Sprinkle on top of your cauliflower mixture.
  10. Top with grated Parmesan if required.
  11. Bake in the oven for 10-15 minutes.

(Makes 1)

1 piece baby kale

1-1 inch slice gouda cheese

1-inch piece mango

1 shredded carrot, sliced thin

Preparation

1. Place cheese on baby kale, top with mango.

2. Wrap and tie with sliced carrot.

25 Days of Snacks – Day 24 – Rudolph Baked Potato

Rudolph-PotatoesA great Christmas recipe for turning a baked potato into a delicious mouthwatering treat – and it is guaranteed to bring a smile to everyone’s face!

Recipe adapted from Pop Sugar

INGREDIENTS

4 medium baking potatoes (about 8 oz each)
Canola oil
½ medium butternut squash (about 10 oz)
3 tbsp unsalted butter, plus extra for brushing the squash
1 tsp Dijon mustard
¼ cup freshly grated Parmesan cheese
2 tbsp milk
¼ cup grated Cheddar cheese
Salt and Pepper
Cherry tomatoes
Cheese straw twists or pretzel sticks
Cooked frozen peas

DIRECTIONS

Preheat the oven to 375˚F. Prick the potatoes in several places, place on a baking pan, and brush all over with oil. Bake for 1 to 1¼ hours, or until they feel soft when pressed.

Cut the butternut squash in half, scoop out the seeds and brush with a pat of melted butter. Bake for about 40 minutes until tender. When cool enough to handle, cut the tops off the baked potatoes and scoop out the flesh. Scoop the flesh of the cooked butternut squash and mash together with the baked potato flesh, mustard, Parmesan, milk and remaining butter. Season with a little salt and pepper. Put the mixture back into the potato shells and top with the grated Cheddar, and cook under the broiler for a few minutes or until golden.

Decorate with a cherry tomato for the nose, peas for the eyes, and cheese straw twists or pretzel sticks for the antlers.

A two second, cute-as-can-be appetizer for Christmas… cheesy reindeer!

Use Laughing Cow spreadable cheese triangles with pretzel twist antlers, peppercorn eyes and olive noses. Note, do not use red M&M’s because M&M’s lose their candy coating on cheese. You can also use a small circle of red bell pepper for the nose and small pieces of black olives for the eyes.

Babybel cheese belly + paper belt = a healthy snack idea for the holiday season. It could also be a fun and easy appetizer for your Christmas party. Can also be packed into your kid’s lunch box!

All you need is a Babybel cheese, yellow and black construction paper.  Cut the yellow paper in the shape of the belt buckle, the black paper in a strip for the belt.  Wrap around cheese for the belt and you’re done!

Halloween Witches Broom Stick Treats

6643414678372352=s740=h555Looking for a last minute snack for Halloween? Use this example from Cheney Elementary who made these in their after school cooking club. Way to go, Cheney!

 

Ingredients (per broomstick)

1/2 cheese stick (any variety)

1 pretzel stick

1 fresh chive

 

Directions

  1. Unwrap cheese stick
  2. Cut cheese stick in half
  3. Cut bottom of cheese stick to resemble broom
  4. Insert a pretzel stick into the tops of each string cheese stick to resemble a broom handle
  5. Wrap each string cheese stick at the top with a chive and form a knot around the cheese stick
  6. Enjoy!
